Recipe KUTTI MIRCH KI MURGH CHOP By Chef Sujeet Singh Executive Chef, Radisson Noida • Chicken thigh with bone 6 PCS • Ginger 20 GM • Garlic 30 GM • salt TO TASTE • crushed red chilly 05 GM • black salt TO TASTE • yellow chill 10 GM • jeera powder 05 GM • kasoori methi 05 GM • green cardamom02 GM • javetri (mace)02 GM • mustard oil 20 ML • processed cheese60 GM • hung curd 150 GM • lemon juice 10 ML • single cream 20 ML Method – First marination: Take chicken pieces, add salt, lemon juice, ginger garlic paste and mix it well. Second marination( after 4 hours) : Take hung curd, ginger garlic paste, salt, crushed red chili, black salt, yellow chilly, jeera powder, kasoori methi, green cardamom, javetri, processed cheese and cream together and make a creamy batter, tempered with Mustard oil and kashmiri mirch and mix marinated chicken to the batter mix it well and keep it aside as chicken will soak spices well. Finally chicken pieces are char grilled to perfection in tandoor. Serve it well with onion slices and mint chutney. Garnish with cream and coriander.
